This recipe is a hit at our house and the kids don’t even know there is no cheese in it, WIN!
Tonight we decided to throw the frozen mixed veggies in with it and it was just as good and got the kids to eat more veggies too!
Ok, here is the recipe. Hope you enjoy!
1-16 oz box of Rotini Pasta ( boil in water with salt)
1 cup tomatoeroasted hummus
1/4 cup Hemp Hearts
1-24 oz can of spaghetti sauce or marinara sauce
a pinch of salt
Once your noodles are boiled and soft drain the water. Then add in spaghetti sauce, hummus and hemp hearts. Stir and add a pinch of salt. If you want to add the veggies make sure you have boiled them before and then add them with spaghetti sauce and turn heat on low.
Thats it’s really simple and yummy!
It’s dinner time and a great meal that is cheap and easy is Taco bowls! Here we go!
Recipe: serves 6-10 people
2 bags of Knorr Mexican Rice (find at Walmart $1 each)
1 can black beans (drain)
1 can Corn
Add Black beans and corn to rice as it cooks. Follow cooking directions on rice bag.
and some lime.
We like to dip the chips in the bowl and eat it up! Enjoy 🙂
This is my kid approved protein shake. We came up with it a few years ago when I first started juicing and eating plant based. This shake is great for a quick after school snack.
1/4 cup hot cocoa
1 Tbsp peanut butter (big scoop)
Big handful of spinach
mix together in blender and enjoy!
Tonight we made our garden soup that we all love, even my 3 year old! It’s very healthy and so yummy. Great for a cold day. It’s also easy which is what I love, especially for dinner. We like to have my homemade tortillas with it, which I will share later.
Recipe: Makes for 6-12 servings
4 garlic cloves
Saute’ together in a large pot with 2 Tbsp of Olive Oil
6 whole carrots, chopped
4 celery sticks, chopped
5 potatoes, chopped
1 Tbsp Garlic Salt
2 Tbsp parsley
2 tsp Dried Dill
2 tsp Salt
12 cups of water
4 bay leaves
Let it boil until potato and carrots are soft. Serve with bread and butter, crackers, or tortillas. Enjoy!!
Our new favorite simple treat is apple chips! They are healthy, crunchy and so good for you. Dave got me this Food Dryer for Christmas and this is our first time trying it out with apples. I used gala apples cause, that is what was cheap at the store right now. My kids love them and it’s a great way for them to eat healthy.
Mine came with 4 trays but you can always buy more. They have some flat ones for doing fruit leather which I will be trying soon! I love that I can cut up the apples in slices, put them on the tray, turn it on and leave it. So simple! I did these ones over night, which is awesome. You wake up to a healthy snack ready to eat!

These are the kids favorite! You can’t even tell they don’t have egg or cow butter in them. So easy and great to make ahead of time and freeze or put into kids lunches. Makes about 20 pancakes
Here is the recipe:
3 cups Flour
7 tsp Baking Powder
2 tsp Salt
2 Tbsp White Sugar
2 1/2 cup Milk
1/2 cup Applesauce
6 Tbsp Soy Butter (melted)
Add all ingredients in a large bowel and mix until its not lumpy. Turn griddle on medium heat (about 350 or so). Use large spoon, scoop or even a measuring up to pour desired amount on griddle. Cook until golden brown and then flip and do the same. Enjoy with Syrup or whatever toppings you and your family like!
OK so I basically took the Ghirardelli cookies recipe (cause its the best) and took out the eggs and replaced them with apple sauce. I do throw in a little bit of cinnamon too. So here it goes…..
What you need
1 cup butter (soften)
3/4 cup sugar
3/4 brown sugar
1/2 cup apple sauce
2 tsp vanilla
In a separate bowl
2 1/4 cup flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
18 oz of chocolate chips
Heat oven to 375 degrees
Add butter, sugar, brown sugar , and mix until fluffy. Add applesauce 1/4 cup at a time and then add vanilla.
Add the dry ingredients in on spoon full at a time until its mixed in. I use a big spoon.
Then add the chocolate chips. I use 18 oz which is half of a 36 oz bag, but if you like more or less..add what you like. Use a cookie scoop and scoop the dough on baking sheets about an inch apart (like three in a row horizontal).
Bake for 10-12 minutes. Golden brown after 10 minutes in the oven, YUM Enjoy!
